
Mellow Spice
Summary
Mellow Spice is a Colombian coffee produced by Sara Gutiérrez, fifth generation of a coffee-growing family, at Finca El Silencio in Buenavista, Quindío, in the central mountain range. Grown at 1,400–1,600 meters above sea level, the Caturra variety benefits from a microclimate created by warm valley winds and cold mountain currents, promoting slow, uniform cherry maturation. The coffee is shaded by walnut, guamo, plantain and banana trees. The process begins with selective harvesting and flotation, followed by manual sorting and pulping. Fermentation uses a bacterial inoculum isolated from a homemade yogurt and cinnamon fermentation, lending consistency and distinctive sensory profiles. After reaching the target pH, the coffee is sun-dried on African beds with careful control. The cup profile features cinnamon, cookie, yogurt and butter notes.
