La Reserva. Café De Colombia
Summary
La Reserva is a Colombian coffee produced by Marlon Rojas Pérez, a third-generation coffee grower and 2024 Colombian coffee taster champion. Grown in Pitalito, Huila, at 1,720 meters above sea level, this lot features the Papayo variety, a natural mutation from Acevedo known for its elongated, curved cherries and resistance to rust. The coffee undergoes a washed process: 48 hours of oxidation in cherry, 88 hours of mucilage fermentation in sealed tanks, then washed and slow-dried for 15 days. It offers a clean cup with notes of melon, mango, orange, and honey, medium-high tartaric-citric acidity, and a creamy medium body.
