The coffee undergoes a washed and co-fermented process, involving selective harvesting, flotation, a 24-hour whole-cherry fermentation, pulping, and a 48-hour submerged fermentation with inoculated yeasts and fruit pre-ferment, followed by controlled washing and sun drying. The sensory profile features yellow fruits, citrus, tea, and rose petals.
