Guji Heirloom El Árbol
Summary
Single-origin coffee from El Árbol farm in Dipilto, northern Nicaragua, run by Claudia Lovo with a focus on social, ecological and economic sustainability. This small lot is an Ethiopian Guji Heirloom variety planted on the farm in 2019, grown at 1150-1300 metres. The cherries undergo a short anaerobic pre-fermentation followed by carbonic maceration in tanks, then are dried in the shade on raised beds for a long period to preserve fruit intensity. Sensory profile: jammy, tropical fruit and violet.
