Summary
This specialty coffee from Peru's Cajamarca region is produced by the El Palto Agroecological Producers Association, founded in 2007 by 25 smallholder farmers. Grown at 1600–1800 meters above sea level in the Chingama coffee valley (Bellavista district, Jaén), it combines Caturra, Bourbon and Catimor varieties. The coffee is organically grown under shade using agroecological practices, washed processed with hand-picked selective harvesting, controlled fermentation and drying. Flavour profile features fruity notes of plum and cherry, buttery-caramel sweetness, with milk chocolate and nutty undertones, smooth body and medium acidity. Suitable for both milk-based drinks and black filter coffee.
