Summary
Pacamara XO is a specialty coffee from Colombia's Valle del Cauca region, produced at Las Margaritas farm, part of the Granja La Esperanza estate. The Pacamara variety is a cross between Pacas and Maragogipe. The XO processing method involves selecting perfectly ripe cherries, placing them in jute sacks for 70 hours with periodic turning for anaerobic fermentation, then machine-drying for 8-12 days followed by climate-controlled storage. The filter roast profile highlights flavor notes of strawberry, milk caramel, and tamarind.
