Indonesien Sadayana
Summary
This coffee comes from small farms in the Rancabali district of Bandung, West Java, Indonesia. The coffee is processed at the Sadayana washing station, established in 2022 and operated by PT Sucafina in collaboration with local producers. The farms grow the Ateng Ijo and Ateng Coklat varieties at altitudes between 1,400 and 1,700 meters above sea level. The coffee undergoes an anaerobic natural fermentation, where the cherries are fermented in sealed tanks with a one-way valve for 72 hours, then dried on raised beds for 2-3 days and on patio for an additional 4-12 days. It offers a sweet and creamy cup with a pleasant body and complexity, featuring notes of strawberry, plum, and nougat.
