Guatemala Don Zabala Microlot
Summary
Single-farm microlot from Carlos Zabala, a member of the AProCafé El Grano growers association in Guatemala's Atitlán region. Grown at high altitude and fully washed, then dried on raised beds. The cup is bright and sweet, balancing brown sugar and pastry-like comfort with mandarin orange acidity and a mix of cherry and raspberry fruit notes.
AeroPress
Ratio 1:16- Time
- 2:30
Grind: Medium-fine grind size, similar to table salt texture.
Use 2 filters instead of one for a cleaner mouthfeel. Start timer when water touches grounds. Once all water is added, stir for 10 seconds, then apply the plunger to create a vacuum and let it brew. Remove everything from the scale before plunging. Start pressing gently at 2:00, finish by 2:30.
