El Silencio Panela

Summary

A single-origin Colombian micro-lot from 5 small-hold farmers in the municipality of Palestina, produced collectively under the name El Silencio. Grown at high altitudes using the Pink Bourbon variety. Processed using a washed method with a double fermentation: dry fermented for 12 hours, pulped, then fermented for 24 hours in water tanks before being washed and dried on raised beds. Flavour notes of lychee, redcurrant, and black tea.
