Las Lajas, Red Honey
Summary
Las Lajas, Red Honey is a coffee from Costa Rica, produced by the Chacon family (Francisca and Oscar Chacon) on their family farm Las Lajas, located in the Sabanilla micro-region in the foothills of the Poas Volcano. Grown at 1300-1500 masl with Caturra and Catuai varieties, this coffee undergoes a Red Honey process where the coffee is dried with most of the mucilage intact and raked only twice daily, resulting in a very fruit-oriented profile. Flavour notes include plum and raspberry jam with a smooth milk chocolate finish and excellent balance.
