Summary
Washed coffee from La Concordia, Chiapas, Mexico, produced by Santiago Luna Girón on his farm La Soledad at around 1,500 meters above sea level. Grown with Bourbon and Marsellesa varieties, the coffee is fermented for 24 hours in concrete tanks and dried for 12-15 days on traditional cement patios. Flavour notes include cinnamon raisin, cacao nib, date, and a fluffy mouthfeel.

Avoid heavy swirling or stirring. Water: 30-80 ppm, moderate alkalinity.
