Etiopien Sidamo Ayla – Presskaffe
Summary
Ethiopian coffee from the Sidamo region, grown near Shantawene at almost 2000 metres, where around 800 smallholders deliver hand-picked ripe cherries to the Ayla washing station. The varieties 74110 and 74158 were selected at the Jimma Agricultural Research Center in 1974 and descend from wild Ethiopian heirloom varieties. After pulping, the beans ferment in tanks for 36 to 48 hours, are rinsed in clean water and dried slowly on raised beds. The cup is lively and elegant: blood orange opens with juicy freshness, followed by strawberry, raspberry and cherry over a soft base of milk chocolate.
