Etiopien Sidamo Ayla – Kokkaffe

Summary

Ethiopian coffee from the Sidamo region, grown at nearly 2000 meters near the village of Shantawene, where around 800 smallholders deliver hand-picked ripe cherries to the Ayla washing station. Varieties 74110 and 74158, selections from the Jimma Agricultural Research Center catalogued in 1974, descend from wild Ethiopian heirloom varieties. After pulping, the beans ferment in tanks for 36 to 48 hours, are rinsed in clean water and dried slowly on raised beds. The cup is lively and elegant: blood orange opens with juicy freshness, followed by strawberry, raspberry and cherry over a soft base of milk chocolate.
