Etiopien Sidamo Ayla
Summary
Ethiopian single-origin coffee from the Sidamo region, grown near 2000 metres around the village of Shantawene. Nearly 800 smallholders deliver hand-picked ripe cherries to the Ayla washing station. Varieties 74110 and 74158, selections from the Jimma Agricultural Research Center catalogued in 1974 and descended from wild Ethiopian heirloom varieties. The cherries are pulped and fermented in tanks for 36 to 48 hours, rinsed in clean water and dried slowly on raised beds. The cup is lively and elegant: blood orange opens juicy and bright, followed by strawberry, raspberry and cherry over a soft base of milk chocolate.
