Etiopien Sidamo Ayla

Summary

Ethiopian filter coffee from the Sidamo region, grown near 2000 m around the Shantawene village washing station, where close to 800 smallholders deliver hand-picked ripe cherries. Varieties 74110 and 74158, selections from the Jimma Agricultural Research Center catalogued in 1974 and descended from wild Ethiopian heirloom varieties. After picking, the cherries are pulped and fermented in tanks for 36 to 48 hours, rinsed in clean water and dried slowly on raised beds. The cup is lively and elegant: blood orange opens juicy and bright, followed by strawberry, raspberry and cherry over a soft base of milk chocolate.
