Summary

A rare Ombligon varietal from José Uribe's El Diviso farm in Huila, Colombia. This lot undergoes a highly controlled sequential fermentation process: hand-selected cherries are oxidised for 24 hours, then anaerobically fermented for 200 hours in a bioreactor with recirculation and added microorganisms. Drying in a sealed steel dehumidifier preserves clarity and flavour. Expect a flavour profile of cherry, chocolate, raspberry, and dried fruit.
