Summary
El Martillo is one of Jose Antonio Salaverria's highest farms in the rolling hills surrounding the Santa Ana Volcano in El Salvador, situated at 1700 masl. The Catuai cherries are de-pulped and soaked for 10 hours for a mild fermentation to remove excess fruit, then dried under shade on clay patios for even temperature and slower drying. This washed lot offers a clean, balanced and easy drinking cup with notes of tonka bean, red grape and cocoa, suitable for all brewing methods.
