This coffee comes from Stefan Muller's Hacienda Bajo Mono farm in Boquete, Panama. It is a Gesha variety grown at 1500 masl. The processing method is a unique 'Chilled Washed' anaerobic fermentation conducted in collaboration with Creativa Coffee District, where cherries are fermented in glycol-chilled steel vats for 72 hours then patio-dried for 38 days. The sensory profile features confectionary notes like lemon cake and peaches & cream, soft florals, bright citrus notes of oranges, meyer lemons and limes, with a white sugar sweetness and long finish.
