Edwin Noreña - Gummy Sharks
Summary
Edwin Noreña's Gummy Sharks is a co-fermented coffee from Circasia, Quindio, Colombia. Produced by third-generation coffee producer and agronomist Edwin Noreña at Finca Campo Hermoso, this blend combines two fermentation experiments: a green apple co-ferment (65%) and a berry co-fermented lot called Ruby (35%). The Pink Bourbon variety was grown at 1,750 meters above sea level. The process involves carbonic maceration, yeast inoculation, and fruit infusion. Flavor notes include green apple, berry, peach rings, lemon candy, fruit snacks, and caramel apple.
