Intrinsic Cherry
Summary
A Gesha variety coffee grown by Stefan Muller at Hacienda Bajo Mono in Boquete, Panama at 1500 masl. Processed using the Intrinsic Cherry method in collaboration with Creativa Coffee District, involving anaerobic fermentation in temperature-controlled bags followed by mucilage fermentation and slow patio drying. Flavour notes include lily, pineapple, mango, and milk chocolate, with tropical and floral characteristics evolving from red sangria-like notes when hot to fruit-infused black tea at warm temperatures and cherry limeade when cool.
