Summary
This Gesha coffee from Finca Deborah, located at 1950 meters above sea level in Volcán, Chiriqui, Panama, is produced by Jamison Savage. The Green Tip Gesha variety undergoes a unique Nirvana (Nitrogen Maceration) process: after picking, the coffee is de-pulped and fermented in sealed tanks injected with nitrogen, then dried as a natural. The cup profile features intense florals, passionfruit, red fruits, bergamot, grape, mango, citrus, stone fruits, berries (strawberries, raspberries, cranberries), dark honey, and maple. The coffee has vibrant acidity and a remarkably long finish. No pesticides are used on the farm and processing is powered by solar energy.
