Finca Deborah - Interstellar Gesha
Summary
A Gesha variety coffee from Finca Deborah, produced by Jamison Savage in the Volcán region of Chiriqui, Panama. Grown at 1900 meters above sea level, the coffee undergoes a yeast inoculated natural processing method. Handpicked cherries are fermented with a proprietary yeast strain for 100 hours, then dried on African raised beds. Flavor notes include hibiscus, blackberry, cocoa nibs, jasmine, lime, orange zest, and stone fruit, with a complex profile that evolves from hot to cool temperatures.
