Peru, Miraflores
Summary
Single origin coffee from the Miraflores farm in Amazonas, Lonya Grande, Peru, grown at 1850m by Manuel Rojas and Esther Requejo. The Bourbon variety is processed as Washed with Anaerobic Fermentation: ripe cherries are selected at 18-23 Brix, held in water for 12 hours, pulped, then fermented anaerobically underwater for 72 hours in valve-sealed GrainPro bags before a final wash and slow drying in solar parabolic dryers for up to 25 days. Tasting notes of lime, raisin and red berry.
