
Xingang - China Espresso
Summary
A single origin espresso from the Xingang farm in Menglian, Yunnan, China, run by Yenai and her daughter Zhaomei. Grown at 1600m altitude on fertile forest soils. The coffee is of the Katimor P3/P4 variety and processed using a double fermentation natural method, with three days of fermentation in bags followed by two days on drying tables, then a final fermentation phase before one month of drying. The cup profile features blackberry, hazelnut, and chocolate notes with a boozy, nutty mouthfeel, dark chocolate sweetness, and cherry marmalade acidity. Scored 87 points. The farm is family-run and exclusively employs women throughout production.
