Summary
A single-origin coffee from the Ixhuatlán del Café region of Veracruz, Mexico. This lot comes from the Santuario Project, sourcing cherries from various farms in the Orizaba area. The coffee is of the Criollo variety, a descendant of Typica. Processed using a washed fermentation method: cherries are submerged to remove floaters, soaked, depulped leaving 25% mucilage, aerobically fermented for 12 hours, sun-dried on raised beds for 8 days, then slowly dried in Guardiolas until 12% moisture. Roasted light by Silver Oak Coffee. Flavour notes are listed on the page but appear redacted.
