Summary
XueCam Organic is a light roast coffee from Mexico, specifically from the Ixhuatlan del Café region in Veracruz. Grown at altitudes of 1,200 to 1,800m, this coffee features the Criollo variety. It undergoes a washed fermentation process: cherries are submerged, soaked, depulped with 25% mucilage retained, aerobically fermented for 12 hours, sun-dried on raised beds for 8 days, then slowly dried in Guardiolas until 12% moisture content, followed by resting in Grain Pro bags. Produced through the Santuario Project in the town of Orizaba, sourcing from various small-scale farms.
