Xuecam Marago
Summary
Mexican coffee from the Ixhuatlán del Café area in Veracruz, grown at 1,200–1,800 m around the town of Orizaba and processed at the Santuario Project's Ixhuatlán centre. Cherries from various farms are floated, soaked, de-pulped leaving 25% mucilage, fermented aerobically for 12 hours, dried on raised beds in the sun for eight days and finished in Guardiolas to 12% moisture. The Criollo varietal, a Typica descendant, gives an excellent flavour profile.
