Summary
This lot comes from the Santuario Project in Ixhuatlán del Café, Veracruz, Mexico, produced from cherries collected from various farms around the town of Orizaba. The Criollo varietal, a descendant of Typica linked to Ethiopian varieties, is grown at 1,200 to 1,800 metres. Cherries are floated, soaked for three hours, de-pulped leaving 25% mucilage, then fermented aerobically for 12 hours before drying on raised beds in the sun for eight days and finishing in Guardiolas to 12% moisture.
