Summary
XueCam Espresso is a light-roast single-origin coffee from Mexico, produced through the Santuario Project in Ixhuatlan del Café, Veracruz. The coffee is made from Criollo variety (a descendant of Typica) grown at 1,200 to 1,800m altitude near Orizaba. It undergoes a washed fermentation process: cherries are float-tested, soaked, depulped with 25% mucilage retained, aerobically fermented for 12 hours, sun-dried on raised beds for 8 days, then slow-dried in Guardiolas. The Santuario Project supports local producers with state-of-the-art processing facilities.
