XueCam Decaf is a decaffeinated coffee from Mexico, specifically the Ixhuatlán del Café region in Veracruz. Grown at altitudes between 1,200 and 1,800m, it features the Criollo variety. The processing involves washed fermentation: cherries are sorted, soaked, de-pulped with 25% mucilage retained, aerobically fermented for 12 hours, sun-dried on raised beds for 8 days, then slowly dried in Guardiolas until reaching 12% moisture.
