Summary
A microlot from Finca El Morito in Cajamarca, Peru, produced by Lenin Flores. Composed of Bourbon and Caturra varieties, processed with a double fermentation (36 hours in airtight tanks, then 48 hours with mucilage) before washing and drying. Flavour notes include wine gum, dried pineapple, and poached pear. Roasted as an omni roast suitable for both espresso and filter.
