The fully washed process includes hand sorting, pulping, 16–24 hour fermentation, washing, and sun drying on raised beds for up to 21 days. Flavor profile offers yellow fruit and apple acidity balanced with sweet maple syrup and honey notes, evolving to apricot and red apple when cooled.
