This microlot from Eastern Haraz in Yemen's Sana'a Governorate is produced by smallholder farmers and curated by Pearl of Tehama. The Yemenia heirloom variety undergoes an anaerobic natural process: cherries are sealed in tanks and fermented anaerobically for 48-72 hours, then dried whole on raised beds for 15-20 days. Roasted light to preserve acidity and aromatic detail, it offers tasting notes of dried strawberry, green apple, and graham cracker with a structured, layered, and rustic cup profile.
