La Valentina
Summary
La Valentina is a natural processed coffee from Honduras, produced by Carlos Mejia on his 25-hectare farm in La Paz. The farm is intercropped with citrus and banana trees for shade. The coffee is made from Yellow Catuaí and Pacas varieties, grown at 1600 meters above sea level. The cherries are hand-picked and dry fermented for three days before being sun-dried on patios for 12 to 15 days. This coffee offers notes of marzipan, banoffee, and raspberry, with a sweet and fruity profile.
