Old Brown Java Coffee is an aged (sometimes monsooned) coffee from Java, Indonesia, grown on the Ijen plateau at altitudes above 1400 metres. It has a medium to dark roast and is characterized by a rich, earthy flavour with herbaceous notes and pronounced acidity. The coffee undergoes an aging process where raw beans are stored in open sheds exposed to warm, moist air, causing the beans to change colour and the flavour to gain strength while losing acidity. Best brewed in a cafetiere or filter machine.
