Summary
This lot from Yessica and Diego Parra is a Sidra varietal with Ethiopian landrace roots, processed as a natural. Whole cherries are fermented for 24 hours, then moved to a different tank where hot water is added for 30 minutes, followed by an 80-hour fermentation with reintroduced mossto. Tasting notes include bright purple florals, juicy purple grape, hibiscus, tropical fruits (pineapple, mango, blue raspberry), and as the cup cools, violet, honeysuckle and mountain laurel, finishing with blueberries, plums and kiwi when cold.
