Bankilal - Fully Washed
Summary
A community lot from five high-altitude indigenous Tzeltal communities in Tenejapa, Altos de Chiapas, Mexico, sourced through Ensambles Cafés Mexicanos. Produced by a group of 16 smallholder farmers (6 women, 10 men) growing heirloom coffee between 1,300 and 1,500 masl within traditional polycultures under native shade canopy alongside ancestral milpa crops. Fully washed and medium roasted, the cup balances chocolatey sweet toffee and nut brittle with a fruity hint of ripe juicy oranges.
