El Choloque - Peru
Summary
A high-altitude washed Typica from Fredis Rodríguez Sosa's small farm, El Choloque, in Ayacape, Cajamarca, northern Peru, grown at almost 2,400 masl. Fredis planted his first Typica trees four years ago to diversify beyond potatoes and maize, and coffee is now his family's main livelihood. The coffee is selectively harvested, sorted, fermented, washed and slowly dried. Tasting notes of wild strawberry, cranberry and sugarcane, with bright, balanced acidity, a syrupy body and a complex, long finish. Suited to all brew methods.
