Summary
El Mirador is a single-origin coffee from Peru, produced by Eli Espinoza in the highlands of Cajamarca. The farm grows Caturra, Bourbon, Java, Geisha, Heirloom, and Typica varieties. Processing is a 48-hour fermented natural method: cherries are picked ripe, floated, fermented whole in tanks for 48 hours, then sun-dried on raised beds in a parabolic dryer for 30 days. The coffee offers tasting notes of grape, peach, and honeysuckle. It is a light roast suitable for all brew methods.
