This coffee from Guatemala's Santa Rosa Department is produced by Minor Salazar at Finca Los Nacimientos, grown at 1200-1400 meters above sea level near Laguna de Ayarza lake. The washed process coffee features Catuai, Bourbon, Typica and Pache varieties. It offers a flavour profile of dark stone fruits, cherry and cocoa nibs with a lingering toasted honey aftertaste. Despite challenges including a severe Roya (coffee leaf rust) attack that decimated 60% of their crop, Minor remains focused on quality production and the farm is supported through a collaborative supply chain focused on transparency and sustainability.
