A rare Java variety coffee from Hilario Ccoyo's smallholder farm in the Moyomonte sector of Huayopata, La Convención, Cusco, Peru. Grown at 1,950 metres above sea level in a ravine microclimate, this lot undergoes a natural process with extended fermentation: three days of sun exposure followed by 12 days in a solar dryer. The result is a clean yet distinctive cup with notes of cocoa paste, green apple, and a structure that sets it apart from both washed and typical natural coffees.
