
Yaye Washed
Summary
Yaye is a washed coffee from the Arbegona woreda in Sidama, Ethiopia, one of the highest coffee-growing elevations in the country. Processed at the Yaye washing station, one of the highest washing stations in the world, the cherries are handpicked at peak ripeness, de-pulped, fermented underwater for 36 hours, and dried on raised beds for 10-14 days. The cup profile is floral with white flowers, citrus like lemon, black tea-like qualities, and notes of yellow stone fruit such as champagne mango.
