
Shady Y Elias - Mixed Berry Ombligon
Summary
This coffee comes from El Vergel estate in Tolima, Colombia, produced by brothers Shady and Elias Bayter. The Ombligon variety is grown at 1500 meters above sea level. The coffee undergoes an anaerobic co-fermentation process where whole cherries are fermented for 4-5 days with a cocktail of yeasts, coffee pulp, and dehydrated berries, then dried on raised beds. Tasting notes include berries, mango, blackberry jam, strawberry shortcake, and red fruit punch with a wine-like quality.
