Rodrigo Sanchez - Passion Fruit
Summary
This coffee comes from third-generation producer Rodrigo Sanchez at Finca Monteblanco in La Tacora, San Adolfo, Huila, Colombia. The variety is Purple Caturra grown at 1730 MASL. The coffee undergoes a co-fermentation process: a mother culture is fermented for 190 hours fed with orange juice, mangoes, and molasses, then the pulped cherry is fermented with this culture for 180 hours in a sealed tank. Drying occurs in direct sunlight for 2-3 days followed by 15-18 days under shaded canopies. The cup is vibrant, tropical, and smooth with notes of passion fruit candy, mango lassi, strawberry jam, and milk tea.
