
Nogales - Pimienta
Summary
A specialty coffee from Los Nogales farm in Pitalito, Huila, Colombia, produced by third-generation farmer Oscar Hernández. The Pimienta variety, isolated at the farm and likely descended from an Ethiopian landrace, is processed using Oscar's proprietary thermal shock natural method: handpicked cherries are subjected to 80°C water for 20 seconds, rapidly cooled, then fermented anaerobically for 96 hours with a pre-fermented liquid dough containing native microorganisms. Dried in mechanical silos and stabilized in GrainPro bags. Flavor profile features dried mango, eucalyptus, roses, and citrus zest.
