Jardines Del Encanto - Maragesha
Summary
A specialty coffee from Felipe Arcila, fourth-generation producer and co-founder of Cofinet, grown on farms Jardines del Eden and Jardines del Encanto in Quindio, Colombia at 1800-1900 masl. This Maragesha variety (a hybrid of Maragogipe and Gesha) undergoes Felipe's proprietary EF2 Natural process: 24 hours of dry aerobic fermentation followed by 50 hours of anaerobic fermentation in GrainPro bags, then dried on raised beds. The cup is intensely floral with notes of hibiscus, mixed berries, pomegranate, tropical fruits like mango and passion fruit, guava, orange, and elderflower liqueur, becoming more citric and complex as it cools.
