Grown at 1450-1500 masl, the coffee undergoes 40-hour anaerobic fermentation before being washed and sun-dried on raised beds. The Sidra variety presents a clean, crisp profile with floral notes of magnolia, stone fruit of dried apricot, vibrant acidity of lemon zest, herbal hints of lemongrass, and a dessert-like sweetness reminiscent of iced lemon cake.
