Gabriel Castaño Buendía, known as the 'godfather of Pink Bourbon,' produced this coffee at La Granada farm in Acevedo, Huila, Colombia at 1700 masl. The Pink Bourbon variety was hand-picked at peak ripeness and underwent an anaerobic washed process: 48 hours of anaerobic fermentation in sealed plastic tanks, followed by pulping and 18 additional hours in GrainPro bags to promote lactic acid production, then washed and sun-dried on raised beds until reaching 10.5% moisture content. Flavor notes include floral aromas, candied lemon, apricot stone fruit, and honey-like sweetness.
