Summary

A washed coffee from Colombia, produced by Jonathan Gasca, a fourth-generation coffee grower. This Bourbon Aji variety offers a complex cup with notes of fig, dates, coconut, and white grape must. The processing involves a 12-hour oxidation on the cherry, followed by pulping, another 12-hour oxidation with mucilage, washing, and drying under a canopy for 10-12 days. The coffee is then stabilized for at least 10 days before resting.
