Peru – Ukuku
Summary
A special lot of Peruvian coffee from small producers in the mountainous regions of Cutervo and Jaén, in northern Cajamarca, Peru. Grown near the San Andrés National Reserve and Huamantanga Forest, on clay soils with constant rainfall. Processed by selective hand-picking, dry pulping, and traditional fermentation of 30-45 hours, then dried in solar greenhouses for 15-20 days. Flavour notes of apple, caramel, and sultanas.
